Pure, smoothn, natural and unmistakably Mavrud
A dry natural red wine from Bulgaria made from 100% Mavrud, using organically grown grapes from Zagreus Winery’s own vineyards.
The grapes come specifically from parts of the estate vineyards where the vines rely entirely on natural rainfall. By intervening less in the vineyard, Zagreus allows the season, soil and climate to play a greater role in shaping the character of the grapes – and ultimately the wine.
The grapes are hand-harvested and undergo wild fermentation in stainless-steel tanks. No additives are used before, during or after fermentation, and the wine is bottled without filtration.
SURVA Mavrud shows the grape in a particularly pure and fruit-driven form. It has the structure and character associated with Mavrud, but the wine feels remarkably smooth and effortless on the palate – natural, generous in fruit, supple in texture and easy to enjoy.
Mavrud with purity, fruit and balance
Mavrud is known for its structure, acidity, dark fruit and distinctive personality. In SURVA Mavrud, those characteristics remain clearly present, but they come together in a particularly harmonious way.
The wine is expressive and fruity, with plenty of typical Mavrud character, yet the tannins feel well integrated and the overall impression is smooth and approachable rather than heavy.
That balance is what makes the wine so appealing. It does not try to turn Mavrud into something lighter or less distinctive – it simply presents the grape in a more supple, polished and immediately drinkable form.
Wild fermentation and minimal intervention
SURVA Mavrud is made with a strong focus on purity and minimal intervention.
The organically grown grapes come from Zagreus’ own vineyard parcels where the vines depend on natural rainfall and are harvested by hand.
Fermentation takes place spontaneously in stainless-steel tanks, using naturally occurring yeasts rather than added cultured yeasts. No additives are used before, during or after fermentation.
The wine is not filtered at any stage of production. Before bottling, sulphites may be added up to a maximum of 30 mg/l.
The result is a pure, unfiltered natural red wine in which fruit, grape character and origin remain clearly at the centre.
Tasting profile
Fruit-driven, smooth and expressive, with ripe dark and red fruit, subtle spice and the characteristic structure of Mavrud.
The wine has enough body and tannin to remain unmistakably Mavrud, but everything feels particularly well integrated. The texture is supple, the fruit is vivid and juicy, and the finish remains fresh and balanced.
It is a wine with substance, but without unnecessary weight – easy to drink, yet full of personality.

A natural red wine that combines character with ease.
Excellent with grilled meats, roast pork, lamb, sausages, slow-cooked dishes, barbecue and Mediterranean dishes with herbs and spices. Its fruit-driven style and smoother tannins also make it versatile enough for charcuterie, burgers and richer vegetarian dishes.

SURVA Mavrud continues a wine previously released under the SANTIMENTI name. With the new generation of wines, Zagreus has brought it into the SURVA range as part of a broader rebranding of its natural-wine portfolio.
The philosophy remains unchanged: organically grown grapes, wild fermentation, minimal intervention and a focus on allowing the grape, vineyard and vintage conditions to speak as clearly as possible.

THE GRAPE MAVRUD
Mavrud – character, fruit and structure
Mavrud is one of Bulgaria’s oldest and most distinctive indigenous red grape varieties. It is closely associated with the Thracian Lowlands and is known for producing deeply coloured wines with structure, fresh acidity and a strong individual character.
Typical Mavrud can show dark fruit, mulberry, blackberry, red berries, spice and herbal nuances, supported by firm tannins and good natural freshness.
In SURVA Mavrud, the grape shows a particularly fruit-driven and supple side. The familiar structure is there, but the texture feels smoother and the fruit more immediate, making the wine especially approachable without losing its identity.
That combination of authentic Mavrud character and effortless drinkability is what defines this expression.
ZAGREUS WINERY
Zagreus Winery was built in 2004, the year of its first harvest. The modern winery operates with a fully integrated production cycle and works exclusively with grapes from its own vineyards.
This allows Zagreus to control the entire process – from growing the grapes to bottling the finished wine – within one operation.
Since 2010, the vineyards have been cultivated according to European organic farming standards. No herbicides or pesticides are used.
For wines such as SURVA Mavrud, that philosophy extends into the cellar as well: organic estate-grown grapes, spontaneous fermentation and as little intervention as possible between vineyard and bottle.

THRACIAN LOWLANDS
Southern Region – Thracian Lowlands
The Thracian Lowlands (Thracian Valley) are one of Bulgaria’s most important wine regions, accounting for approximately 35% of the country’s total vineyard area.
The region has a moderate continental climate, a long growing season and warm summers. These conditions are particularly well suited to Mavrud, which has been associated with southern Bulgaria for generations.
The region allows Mavrud to develop ripeness and depth while retaining the acidity and structure that give the grape its distinctive character.
For SURVA Mavrud, that regional identity is expressed in a very direct way – organic fruit, natural fermentation and minimal intervention, with the character of Mavrud left firmly in the foreground.
