Fresh, pure and naturally expressive
A dry natural white wine from Bulgaria made from 50% Dimyat and 50% Rkatsiteli, using organically grown grapes from Zagreus Winery’s own vineyards.
The grapes for this wine come specifically from non-irrigated parts of the estate vineyards. The idea is simple: By relying only on natural rainfall, Zagreus deliberately allows the growing season, soil and climate to play a greater role in shaping the character of the grapes and ultimately the wine.
The grapes are hand-harvested and undergo wild fermentation in stainless-steel tanks. No additives are used before, during or after fermentation. The wine then matures in glass demijohns until the end of April and is bottled without filtration.
Fresh, dry and lively, SURVA Dimyat & Rkatsiteli is a pure expression of two traditional white grape varieties – bright in character, naturally made and full of energy.
Two grapes built around freshness
Dimyat and Rkatsiteli complement each other naturally in a fresh and expressive natural white wine.
Dimyat brings freshness, delicate fruit and an easy, lively character, while Rkatsiteli contributes acidity, structure and extra definition. Together they create a dry white wine that feels light on its feet, but has enough character and structure to hold its own at the table.
The result is a balanced combination in which neither grape dominates. Instead, freshness, fruit and acidity come together in a clean and expressive style.
Wild fermentation and minimal intervention
SURVA Dimyat & Rkatsiteli is made with a strong focus on purity and minimal intervention.
The organically grown grapes come from Zagreus’ own non-irrigated vineyards and are harvested by hand. After pressing, the grape juice undergoes wild fermentation in stainless-steel tanks, relying on naturally occurring yeasts rather than added cultured yeasts.
No additives are used before, during or after fermentation.
After fermentation, the wine matures in glass demijohns until the end of April. It is not filtered at any stage of production.
Before bottling, sulphites may be added up to a maximum of 40 mg/l. The technical analysis of the wine records a total SO₂ level of just 4 mg/l.
The result is a remarkably pure and minimally handled white wine in which freshness, grape character and origin remain fully visible.
Tasting profile
Dry, fresh and lively, with bright acidity and a clean, expressive character. Expect delicate fruit, citrus freshness and subtle floral and herbal nuances, supported by the natural structure of Rkatsiteli.
The wine is light and refreshing, but not simple – its high natural acidity and unfiltered character give it energy, texture and a distinctly authentic feel.

A fresh natural white wine made for relaxed drinking and food alike.
Excellent with seafood, grilled or baked fish, fresh salads, vegetables, lighter poultry dishes and Mediterranean cuisine. Its lively acidity also makes it a very good partner for salty cheeses and dishes with herbs, lemon or fresh vegetables.
Also an excellent choice for anyone wanting to discover natural Bulgarian white wine through two traditional grape varieties in a very pure style.

SURVA Dimyat & Rkatsiteli continues a wine previously released under the SANTIMENTI name. With the new vintage, Zagreus has brought the wine into the SURVA range as part of a broader rebranding of its natural wines.
The philosophy remains the same: organically grown grapes, wild fermentation, minimal intervention and a focus on purity rather than manipulation.

THE GRAPES
Dimyat & Rkatsiteli – freshness and structure
Dimyat is an indigenous Bulgarian white grape variety known for its freshness, delicate fruit character and naturally light, lively style.
Rkatsiteli is one of the ancient grape varieties of the wider Black Sea and Caucasus wine world. It is valued for its bright acidity, structure and ability to retain freshness even in warmer growing conditions.
Together, the two varieties create a particularly natural balance. Dimyat brings openness and freshness, while Rkatsiteli provides acidity and structure.
In this dry white expression, the emphasis is firmly on purity, energy and drinkability.
ZAGREUS WINERY
Zagreus Winery was built in 2004, the year of its first harvest. The modern winery operates with a fully integrated production cycle and works exclusively with grapes from its own vineyards.
This allows Zagreus to control the entire process – from growing the grapes to bottling the finished wine – within one operation.
Since 2010, the vineyards have been cultivated according to European organic farming standards. No herbicides or pesticides are used.
For wines such as SURVA Dimyat & Rkatsiteli, that philosophy extends into the cellar as well: organic estate fruit, natural fermentation and as little intervention as possible between vineyard and bottle.

THE REGION
Southern Region – Thracian Lowlands
The Thracian Lowlands (Thracian valley) are one of Bulgaria’s most important wine regions, accounting for approximately 35% of the country’s total vineyard area. Its moderate continental climate, long growing season and warm summers create favourable conditions for both indigenous and international grape varieties.
The region is best known for powerful red grapes such as Mavrud, but it also produces expressive white and orange wines in which freshness, ripeness and regional character can come together.
