Tiara White Mavrud BIO is a dry organic white wine made entirely from Mavrud – one of Bulgaria’s most distinctive indigenous red grape varieties.
Mavrud is normally associated with deeply coloured, structured red wines. Tiara shows a completely different side of the grape. By separating the juice from the dark skins almost immediately after crushing, Zagreus creates a genuine blanc de noir: a white wine from a red grape.
The result is fresh, elegant and surprisingly expressive, combining juicy fruit and floral aromas with the natural substance and character of Mavrud. It is an unusual Bulgarian wine, but much more than a curiosity – it is a convincing example of how versatile this historic grape can be.
How a red Mavrud becomes a white wine
The difference begins immediately after harvest.
The organically grown Mavrud grapes are hand-picked and destemmed. Instead of allowing the juice to remain in contact with the dark grape skins – as it would when making red Mavrud – the juice is quickly separated from them before significant colour and tannin can be extracted.
Fermentation then takes place at a cool 15–16°C, preserving freshness, fruit and delicate aromas. The wine is made without oak ageing, allowing this unusual white expression of Mavrud to remain clear, lively and fruit-driven.
The pale colour therefore does not come from a white grape at all. Behind it is the same Mavrud that can produce some of Bulgaria’s most powerful reds, simply interpreted through an entirely different winemaking approach.
Fresh, aromatic and beautifully rounded
Tiara White Mavrud combines the freshness expected from a white wine with a little more texture and presence than many light, straightforward whites.
Green apple, pear and quince form the fruity core, accompanied by white flowers and delicate rose nuances. Subtle mineral tones add freshness, while gentle spicy and almond notes appear in the background.
The palate is juicy and balanced, with good acidity, a rounded texture and enough body to give the wine substance without making it heavy. It finishes fresh, elegant and pleasantly persistent.

TASTING NOTES
Colour: Bright, pale straw-yellow.

FOOD PAIRING
The combination of freshness, fruit and structure makes Tiara White Mavrud unusually versatile at the table.
It works particularly well with white fish, shellfish, tuna, seafood pasta, creamy pasta dishes and veal. It can also accompany artichokes, olives, nuts and lighter cold meats.
For cheese, try Gruyère, mild Cheddar, Parmigiano-Reggiano or Provolone.

THE GRAPE MAVRUD
Mavrud is one of Bulgaria’s emblematic indigenous grape varieties and is particularly associated with the Thracian Lowlands in southern Bulgaria.
It is best known as a red-wine grape, capable of producing wines with deep colour, good acidity, firm structure and distinctive fruit and spice. For that reason, encountering Mavrud as a white wine is particularly unusual.
Tiara demonstrates another dimension of the variety. By removing the juice from the skins before colour and tannin are extracted, Zagreus reveals a fresher and more delicate expression while still retaining enough body and personality to distinguish it from a conventional light white wine.
It is a modern interpretation of a very traditional Bulgarian grape.
ZAGREUS WINERY
Zagreus Winery was built in 2004, the year of its first harvest. The modern winery operates with a fully integrated production cycle and works exclusively with grapes from its own vineyards.
This allows Zagreus to control the entire process – from growing the grapes to bottling the finished wine – within one operation.
Since 2010, the vineyards have been cultivated according to European organic farming standards. No herbicides or pesticides are used.
For Tiara White Mavrud BIO, that philosophy is expressed through a completely different interpretation of Mavrud: organically grown estate grapes, careful white vinification and cool fermentation, creating a fresh, elegant blanc de noir that shows the versatility of the grape.

Southern Region – Thracian Lowlands
The Thracian Lowlands (Thracian Valley) are one of Bulgaria’s most important wine regions, accounting for approximately 35% of the country’s total vineyard area.
The region has a moderate continental climate, a long growing season and warm summers. These conditions are particularly well suited to Mavrud, which has been associated with southern Bulgaria for generations.
The region allows Mavrud to develop ripeness and depth while retaining the acidity and structure that give the grape its distinctive character.
