Santimenti from Zagreus Winery expresses the desire and the strive of the wine makers to return to the original, primary, untamed and pure character of the wine, which the terroir and the nature gift us.
SANTIMENTI Dimyat & Rkatsiteli | Vin Nature is characterized by its unique naturalness and liveliness. A natural and terroir wine made with minimum intervention in order to preserve and strengthen the authentic characteristics of the grape variety.
Wine Making
Maceration with the skins for 7 days. Wild fermentation of the grape juice in stainless steel tank. No additives are used. The wine was left to
evolve naturally without any manipulation. The wine matures in glass demijohns until the end of April. No clarification and filtration at any stage of its production. Before bottling, a maximum of 35 mg/l of sulphites are added.
*By natural wines up to 40 mg/l of sulphites are allowed.
TASTING NOTES
Colour: Attractive straw yellow colour;
Aroma: Complex, multi-layered aroma of white fruit, honey, toasted almonds, accompanied by delicate flowery accents;
Taste: Dry, clean and aromatic with good texture. Luscious stone fruits, sage, ripe tangerine and pink grapefruit dominate the taste among subtle notes of rried herbs.
A special natural wine, something different, that tastes just as good as a good wine!

HOW TO DRINK IT
Meals: Prosciutto crudo, small Mediterrean blue fish, boiled eggs with green asparagus;
Cheese: Blue Castello, goat cheese, Gruyère, Sharp Cheddar;

THE REGION
Southern Region – Thracian Lowlands
This region includes around 35% of the vineyard massifs and is characterized by a moderate continental climate and good distribution of precipitation during the vegetation period.
ZAGREUS WINERY
Zagreus Winery was built in 2004, the year of the first harvest. The winery is an ultra modern building with a fully integrated cycle of production. In order to perform maximum quality control during the whole process of wine production, Zagreus only uses grapes from its own vineyards.
As of 2010 all wines of Zagreus are organic according to the directives of the European Union. No herbicides or pesticides are used in the vineyards. The owners are proud of their fully integrated cycle of production. The whole process from the vines to the bottle happens at one place and is in "own hands", which guarantees full quality control.
