Santimenti Mavrud by Zagreus Winery expresses the desire of the wine makers to return to the original, primary, untamed and pure character of wine, which the terroir and the nature gift us.
Santimenti Mavrud is characterized by its unique naturalness and liveliness. A terroir wine made with minimum intervention in order to preserve and strengthen the authentic characteristics of the indigenous grape variety Mavrud.
Wine Making
The wine is made from organically grown grapes from own vineyards of Zagreus Winery. The grapes are carefully selected with an emphasis on their quality and ripeness. Wild, open-top fermentation in INOX vessels. This method preserves the natural taste characteristics and expression of the Mavrud variety. No additives and no human intervention in the fermentation process. As a fully natural wine neither fining, nor filtration are used at any stage of its creation. Before bottling, a maximum of 30 mg/l of sulphites is added to keep the wine alive in the bottle.
*By natural wines up to 40 mg/l of sulphites are allowed.
TASTING NOTES
Colour: Extremely vivid, purple-red colour with shiny violet hues;
Aroma: Rich and multi-layered aroma with pronounced fruity accents of cherry, red fruit, blackcurrant, plum, dried leaves and spices;
Taste: Full body, rich and powerful on the palate, nicely balanced, with smooth texture. Strong taste with decisive fruity notes and juicy character. Ripe and well-rounded tannins. Fruity and refreshing finish with long and mineral aftertaste;

HOW TO DRINK IT
Meals: BBQ or other succulent grilled or baked red meats, duck, lamb (grilled, broiled), pasta with tomato sauce, pates, spicy Chinese, veal, venison;
Cheese: Danish Blu, Emental, Gouda, Gruyere, Pecorino, Toscano, Sharp Cheddar;
Temperature: 16-18°C
THE REGION
Southern Region – Thracian Lowlands
This region includes around 35% of the vineyard massifs and is characterized by a moderate continental climate and good distribution of precipitation during the vegetation period.
ZAGREUS WINERY
Zagreus Winery was built in 2004, the year of the first harvest. The winery is an ultra modern building with a fully integrated cycle of production. In order to perform maximum quality control during the whole process of wine production, Zagreus only uses grapes from its own vineyards.
As of 2010 all wines of Zagreus are organic according to the directives of the European Union. No herbicides or pesticides are used in the vineyards. The owners are proud of their fully integrated cycle of production. The whole process from the vines to the bottle happens at one place and is in "own hands", which guarantees full quality control.
