* We recommend to serve this wine slightly chilled. Perfect on its own as well in combination with food.
A very interesting point in this wine is the technology it was made by. Half of the wine fermented with wild yeast - not spontaneous fermentation, important to say. The other half – with cultivated yeast. Then it aged on the lees (sur lie) for 10 months in order to concentrate more taste and freshness. The wine had no contact with oak during its production. In order to preserve its uniqueness and fruity character, the wine maker chose not to furthuer processed and stabilize the wine. It was only roughly filtered before bottling.
